The Champagne ageing process is more involved than any other wine. Great vintages will comfortably improve for twenty, even fifty years. This evolution relies on a complex interplay of acidity, fruit and oxygen as well as dosage, dissolved carbon dioxide and the lees themselves. Currently, our disgorgement date is 2019 for our Vintage 1996.
We at Héloïse Lloris pride ourselves for our dedication to the traditional craft of artisan wine making. We still use the process of manual riddling and our dosage liquor is aged in perfumed oak casks. Our champagne is disgorged solely on demand, creating remarkable bubble strength and density. Maintaining this heritage and methods gives Héloïse Lloris its superior taste and quality.
